The Slovak Language Group is happy to share several recipes which are recognized as Slovak. If you visit
Slovakia, the menus in the city restaurants are very similar to ours but in the smaller towns and villages you will find the more ethnic and local cuisine. Slovakia is surrounded by Austria, Poland, Hungary, Ukraine and the Czech Republic and the cuisine will reflected these countries. The national dish of Slovakia is Haluski with Bryndza. This is a spaetzle made with sheep cheese (bryndza), which is similar to our cream cheese but with a little bit of bite to it, and crispy bits of bacon with some of the bacon fat. The main meal is served for lunch, at mid day. The menu will frequently include soups of all kinds, chicken, pork, turkey and various sausages for the main entrees, rice, potatoes and noodles for the side dishes. Beef is seldom served. Cabbage is a popular side dish. Paprikash and gulash are delicious main courses. Salads consist of green peppers, cucumbers and tomatoes. Baked desserts are the highlight of the meal, crepes, strudels, various cream and fruit filled pastries and of course the ever popular nut rolls and poppy seed rolls. The usual beverages are wine, beer and soda. Water is by request only. Coffee is strong and served in demitasse cups. Ice cream, very rich and creamy is also available.
